GoldSpice Red Lentil Dal

1 tbsp oil (sesame best)
1 red onion, chopped
1 garlic clove, crushed
1 inch ginger, peeled and chopped/grated
1 red chilli, chopped
2 sweet potatoes, cut into chunks
250g Red Lentils
600ml veg stock
80g bag spinach
Spring Onions (garnish)
4 tsp GoldSpice
Heat oil in pan and add red onion. Cook on low heat until softened.
Add crushed garlic, chopped chilli and ginger, cook for 1 min, then add GoldSpice and cook for one min more.
Turn up heat to medium, add sweet potatoes and stir until coated.
Add lentils and stock. Season.
Bring to boil, then reduce heat, cover and cook for further 20 mins. Lentils want to be tender and potato just holding shape.
Taste and add seasoning/more GoldSpice where required. Gently stir in spinach. Once wilted serve with spring onion and basil garnish.
