Molly's Mushroom Curry

Serves 2

Prep time: 20 mins

Cooking time: 20-30 mins

Ingredients 

  • 1 Onion

  • 1 tbsp Ghee

  • 2 crushed Garlic Cloves

  • A handful of Plum Tomatoes

  • 1 tsp Garam Masala

  • 3 tsp of GoldSpice

  • 1/2 tsp Cinnamon 

  • 1 tin Coconut Milk

  • 1/2 tin Chickpeas

  • A handful of Mushrooms

  • Coriander and Cauliflower Rice

 

Method

  1. Chop all ingredients.

  2. Fry spices and onion in ghee.

  3. Add mushrooms and coconut milk.

  4. Place chickpeas and tomatoes in oven and roast until chickpeas are crunchy.

  5. 'Throw it all together and voila!'
